Quinoa Salad with apples, peas and coconut

I came across this recipe on Vegetarian Times website. I have been wanting to cook with quinoa because of its texture and nutritional benefits.
This is very easy dish to make and I definitely recommend making it with Carrot juice.
Great side dish to any meal 🙂 I take this to work with me for lunch. Great slightly heated or cold. Oh and don’t forget to pre-soak your quinoa!
